Reflection: Small changes can make a big difference

Today, I’m grateful for: a fun, new mid-week dinner

Challenge: Try a new recipe!


I officially fell victim to the famous TikTok pasta recipe craze and I have to admit, it was quite a delicious thing to stumble upon. 😅 I feel obligated to disclose that I am not a TikTok user, and in general, I’ve been trying to throttle my social media usage. But boy oh boy, if anything could make me adopt a new social platform, I think it’s this recipe!


There’s a handful of different versions floating around out there, but they all follow the same general philosophy: feta, pasta and a whole lotta tomatoes. I took the liberty to add some of my favorite spices, mushrooms and some whole milk to add to the creaminess. The recipe seems very forgiving and overall, I was super pleased. I would definitely make it again, and I think my fam would agree!



It’s funny how little things like trying a new recipe can add a spark of joy to life. Wintertime + pandemic life has left me grasping at straws to come up with new ways to spice things up, and this average Wednesday evening dinner was the perfect opportunity to add some zing to our week with this fun recipe!


Today, I’m grateful for this fun new recipe and the joy it added to our week.
