Reflection: Letting go of what was, and making the best of what is.
Today, I'm grateful for: Gameday!
Challenge: Tweak a favorite activity for 'at-home'.
It's gameday! A day across America where, typically, teams and fans unite to celebrate America's second-favorite pastime....Football. As with everything else, gameday looks quite a bit different this year. No tailgating. No stadiums full of crowds. No traditional "College Gameday" broadcast (although, they're getting creative in this pandemic season too). But I'm here for it.
An agenda-less Saturday with gameday eats at home is about as good as it gets these days. So we're choosing to make the best of it. On the docket for today is:
All the snacks: Mexican food is a frequent flier in the Sepich-household. It's an easy crowd pleaser, even for my 1-year old son. And I'm a firm believer that a little cilantro can take any dish from meh to Ba-zinga! Today, I've got all the goods in the crockpot which makes for a versatile meal or snack all day long. Quesadillas? Nachos? Tacos? You decide!
Homemade guacamole: Anyone who knows me knows I have a passionate relationship with Chipotle. I'm also a fan of companies with a no-BS philosophy, and Chipotle plays right along making their guacamole recipe readily available for anyone who wants to give it a whirl. (You can view their official release of the recipe on their Instagram account from April.)
And last, homemade pumpkin bread: I don't think this technically qualifies for our mexican menu, but my mom sent me my grandmother's pumpkin bread recipe last night, and I've been thinking about it ever since . Plus,'tis the season for all-things-pumpkin (#basic), so I'm chalking it up to a "fall theme", and rolling with it.
To close, here's a few more ideas for in-person activities that you can give your own at-home twist:
Movie night: We like to pull all our cushions off the couch and put them on the floor to make one big cozy spot. Complete the package with homemade popcorn, and lots of blankets (an at-home bonus!).
Date night: I'll admit, we're yet to take this one seriously....(with a one-year old, sometimes the juice just isn't worth the squeeze). BUT, we do take the time to cook our favorite meal, and share a glass of wine over dinner every now and then. Maybe next time, I'll get fancy and light a candle... =P
Concert night: Raise your hand if you had to cancel concert plans because of COVID? *raises hand*. If you're missing those concert experiences, there are a fair amount of concert-esque films and documentaries on Netflix. Up for a challenging alternative? Buy an instrument, check out some YouTube tutorials and give it the good ol' college try!
